I will start by saying Magic: The Gathering has so much frying inspiration within it, its amazing.
While searching through some cards i came across this beauty:
This card instantly got my thoughts rolling so I decided to try a little DM Nastics
As this is my first time homebrewing a creature I have no idea now to balance it (I play 5e btw).
I decided to start with a shambling mound base, but tweak it just a tad.
Here goes, here is my Lichenthrope, any input would be greatly appreciated!

Lichenthrope
Large Monstrocity, Chatotic Neutral
The lichenthrope is the result when a human makes a pact with Gulthias. Their human body remains as a core to the monster, but their outer layer is made up of a skeleton of roots with musculature of moss and lichen. The human inside has their previous knowledge but has an unending need to consume organic life. If left unchecked a Lichenthrope can rip the organic life from a small forest in a matter of days. Growth slows once it reaches about 15 feet tall, but any major physical trauma may reactivate the hunger and accelerate it’s growth again.

Ever Absorbing: At the beginning of the Lychentrope’s turn it regains a quarter of the hit points lost since its last turn; only if it is near vegetation or has engulfed a creature. If the core is exposed the HP gained is half of the damage taken instead.
Human Core: Once the Lichenthrope is below a quarter of its maximum HP, its human core will be exposed. If the core takes 16 damage (AC16) the creature dies, no matter its shell’s HP.
Spore Release: It may use an action to release a cloud of spores in a 10 foot cone from it. Targets must make a DC15 Con save or be put to sleep. Affected creatures wake up at the end of their next turn.
Multiattack: The Lichenthrope makes two slam attacks. If both attacks hit a Medium or smaller target, the target is grappled (escape DC 14), and the lichenthrope uses its Engulf on it.
Slam: Melee Weapon Attack: +6 to hit, reach 5 ft., one target. Hit: 11 (2d6 + 4) bludgeoning damage.
Engulf: The lichenthrope engulfs a Medium or smaller creature grappled by it. The engulfed target is blinded, restrained, and unable to breathe, and it must succeed on a DC 14 Constitution saving throw at the start of each of the lichenthrope's turns or take 13 (2d8 + 4) bludgeoning damage. If the mound moves, the engulfed target moves with it. The mound can have only one creature engulfed at a time.
