Has anyone ever put their parties up against a thief or assassins guild?
My party started with a stereotypical style classic rogue who has since really bought into the role playing of our campaign.
The rogue was originally tasked by his guild to spy on and later to kill one of the party members. However, now the party has to work towards a new area, and the only knowledge of its location is with the guild.
Whether they try to approach the guild and slyly acquire the information or outright steal, who knows. However, at some point the guild will attempt to capture or kill the PCs.
As such, has anyone ever done an interesting approach or mechanic to such an event?

It depends a lot on the make up of your group, but a thieves guild could be an amazing pseudo dungeon. You could have some try and sneak in whike other characters are the hammer style. You could have planning styles like a heist as well. If you wanted a longer burn you could plant thieves in the town's that the players go to thaf report back to the guild of their activity. Allowing the players very subtle clues to see the npc is a guild plant. Then of course you could have the guild approach the players with the hammer mentality and random hired mercs attack them. Random ideas i have, and hopefully something is amazing to you, haha.
