I would say yes, use the clerics AC, and for HP = the clerics spell attack bonus (prof+wis bonus)

I do not treat the weapon as a physical object. It causes force damage, not bludgeoning/piercing/slashing. It can't be attacked, grabbed, or used. It can be dispelled, and that's about it. That's what makes it one of the great signature cleric abilities. No concentration, free bonus action attack for the low cost of a 2nd level slot.
Since the spiritual weapon is not a creature, one can move through it and leave its reach without provoking an opportunity attack. I'm not sure if there's an official ruling on how to treat a creature occupying the same space as a spiritual weapon, but I would allow it.
On a mechanical level, I think of it more as a 5' square area effect that allows you to make an attack roll to cause force damage to a creature in an adjacent square. This is an evocation spell, afterall, not conjuration. From this point of view, attacking a spiritual weapon would be like attacking a Hunger of Hadar effect.
On a narrative level, I would describe the weapon as noncorporeal, faintly glowing, translucent, etc... until the moment it strikes, and then only for an instant.
