No access to the PHB right now so I can't look it up.
Say a Wizard looses his spellbook, or has it taken away, and he casts the spells he had memorized that morning. After a Long Rest, does he still have those same spells memorized, or does casting the spell wipe his memory of what he had?

Changing the prepared spells is optional after a long rest for a wizard. They can keep the same spells prepared indefinitely.

DMSam is correct. You can also copy your prepared spells into a new spellbook without needing the old one (as long as you have time and materials), in the event the old spellbook is completely irretrievable.

Indeed, as Dmsam mentioned you could just keep the same spells that they had prepared forever, and they would essentially be forced to do so util a replacement spellbook was made, or they got their own back. Nevvur is also right in that you can copy the spells you have prepared into a new spellbook, but the important thing to note is that the character could copy ONLY those prepared spells into a new book and would need to find/buy new spells to fill out the rest. This is of course unless you wanted to house rule in arcana checks to remember the other spells, or handwave them remembering or something like that.
